We have to dig into this a little more because it is a perfect example of why the idea of "bootstrap American success" is such a harmful myth: What we have here is a financial relationship in which a good & a service are exchanged for a fee. The good is the food. The service is the service. The fee is the bill + tip. It stands to reason, in bootstrap country, that the fee reflects the quality of the good & service.
